Ever tell yourself that you shouldn't eat cake for breakfast? Well, I have the solution. Here I present you a cake that is meant to be eaten for breakfast (or any other time really). This cake is not super sugary sweet that will make you crash mid morning or too heavy to eat early in the day. Instead it is light and fluffy, and just sweet enough to give you a little treat. And, hey, we even threw in some blueberries to make it healthy :).
To make these cakes individual size and easy to grab for breakfast, I used my set of Wilson 6 inch layer cake pans. They are perfect for little desserts and treats like these, as they can create small baked goods at the perfect thickness. Afflilate link here: Wilton Easy Layers 5-Piece Layer Cake Pan Set. I highly recommend them! They are inexpensive and can be used to make many things!

With a few easy additions, you will find yourself curled up next to a cozy fire with a warm Pumpkin Streusel Muffin to help you welcome autumn.
